Serving tip: Essential alongside flatkökur, rúgbrauð, or fresh from the pan onto a warm waffle.

Origin: The Icelandic dairy cow arrived with the settlers in the 9th century and has remained genetically unchanged since. Its milk carries a higher fat content than most modern breeds, which is why the butter tastes the way it does.
