Flatkökur | Icelandic Rye Flatbread

Ingredients: Rye flour, wheat flour, salt, water.
How to prepare: Serve at room temperature. Warm briefly on a dry pan if preferred.
Serving tip: The classic pairing is Icelandic butter and a few slices of hangikjöt. Nothing else needed.
Origin: Flatkökur predate the Icelandic oven. For generations they were cooked directly on hot stones or open coals across the country's turf-house kitchens. The slight char is not a flaw, it is the recipe.
