A winter staple from the old farmhouse table. A traditional Icelandic smoked lamb sausage. Dense, savoury, and built to carry a household through winter.
Maximum 4 pieces per shipment. Due to customs restrictions, ships to the USA only. Refrigerated transit; dispatched Mondays and Tuesdays only to avoid weekend delays.
Ingredients: Icelandic lamb (80%), water, potato flour, salt, soy protein, beef stock, stabilisers (E450–E452), preservative (E250), antioxidant (E301). Contains soy. Remove plastic casing before serving.
How to prepare: Simmer gently in water for 25–30 minutes until heated through. Remove the casing before serving. Slice thick.
Serving tip: Traditionally served with boiled potatoes, white sauce, and rúgbrauð on the side.
Origin: Bjúgur belongs to the older Icelandic table, the food of long winters, when lamb had to last until spring and nothing was wasted. It is rarely found outside Iceland and almost never outside an Icelandic home.
