Ingredients: Wild blueberries, sugar, potato starch, water.

How to prepare: Whisk into hot water and bring to a gentle simmer. Serve warm or chilled.

Serving tip: A spoonful of cream lifts it. Pairs naturally with rúgbrauð or kleinur on the side.

Origin: Each August, Icelanders take to the highlands and lava fields with buckets to pick aðalbláber, the wild bilberry that thrives in volcanic soil. Bláberjasúpa is one of the oldest ways the harvest is preserved into winter.
