Bláberjasúpa is one of the oldest ways Iceland preserves its late-summer harvest of wild blueberries, picked by the bucket across heathland and lava fields each August. Vilko's mix uses wild blueberries, sugar and potato starch: whisk into hot water, simmer gently, and serve warm or chilled. A spoonful of cream lifts it, and rúgbrauð or kleinur belong on the side.
