Vilko's vöfflublanda makes the heart-shaped waffle at the centre of vöfflukaffi, Iceland's afternoon ritual of coffee and waffles observed in homes, summer cottages and country churches alike. Made with wheat flour, sugar, vanilla, dried egg and dried milk: just whisk with water, milk and melted butter and cook until golden. Serve the Icelandic way, with whipped cream and rhubarb or blueberry jam.
