The one every Icelander grew up on. The national soup. Icelandic lamb, root vegetables, and herbs, slow-simmered the way it has been made in farmhouse kitchens for centuries.
Ingredients: Rice, salt, potatoes (8%), turnips (7%), flavouring (contains soy), dried Icelandic lamb sausage (beef, lamb, pork, goat, salt, sugar, preservative E250), yeast extract, leek (4%), rapeseed oil, carrots (3%), celeriac, onion (3%), parsley (0.3%), spices.
How to prepare: Bring to a gentle simmer. Serve hot, in a deep bowl.
Serving tip: The traditional accompaniment is rúgbrauð and smjör on the side. Nothing more is needed.
Origin: Kjötsúpa is the soup Icelandic families eat on cold days, after long drives, and at the end of the lamb roundup each September. The recipe varies by household but the principle does not: lamb, roots, time. It is the most honest dish in the Icelandic kitchen.
